Wheat bran cakes

Hey all. I get asked a lot how to make these, so i’ll share the recipe again.

Cake for breakfast?! Why not πŸ˜πŸ‘. These cakes are absolutely packed with fibre and are only 1/2 of your healthy extra B and some of your A, if you calorie count, (I don't), then they are low calorie too, but so filling!!!! Mine today is a blueberry and Sicilian lemon one with yogurt and fruit. Gorgeous. Mix 30g of wheat bran, I get mine from holland and barrett, 1 egg, 90ml of skimmed milk, a cap of Sicilian lemon essence from Tesco and a handful of blueberries. Then pop it in a microwaveable tub and heat for 3 to 4 mins, give it a really good mix before hand again. You can add yogurt if you don't want to use milk. Nice warm or cold. You can play around with the flavours and fillings. I don't syn the cooked blueberries as there's not many and I would have eaten them anyway. I topped it with fat free greek yogurt and cinnamon.

You can make so many different varieties! Banana, carrot and so on…. Xx
